Our Chardonnay vineyard is located on the border with South Tyrol, where some 3,200m2 were planted in 1960. Around 18 Htl and 2400 bottles are produced.
The grapes are harvested in 2 separate periods: early and late, late August and mid September.
The grapes are harvested exclusively in the morning before 10.30 am, in 15 kg boxes; at 11 in the morning the pressure of the grape begins in the lung press.
Selecting the ripest grapes, the first harvest is fully fermented in wood, in new 500lt barrels, at low temperatures (below 18°C) for approximately 12 days. Once the fermentation is over, it rests in steel on the fine lees until February.
